April 2nd Is National PB&J Day! If your kids are anything like mine, they love peanut butter and jelly. All 3 of my kids request this pretty much on a daily basis, and we have lots of fun experimenting with new ways to serve this lunch time classic. It's always neat to change things up a bit! Recently, I teamed up with the awesome folks at Welch's to help celebrate National PB&J Day, which will happen on April 2nd. They generously sent my family a couple of jars of their Natural jelly. I love that they offer this all natural option that contains nothing artificial, and is free of high fructose corn syrup. It tastes amazing, and I don't experience "Mommy Guilt" because of the fact that there are no chemicals, artificial colors and flavors, or preservatives. Kyle's Welch's PB&J Experiment I enlisted the help of my 13 year old, Kyle, to come up with an interesting, kid-friendly spin on traditional PB&J sandwiches. Leave it to my creative kiddo to think outside of the box and make something artistic! Kyle calls his creation Welch's Marshmallow Madness. This is a PB&J "structure", according to the recipe's inventor. Here's how to make it! First, make a normal PB&J sandwich. 2 of them, actually. We made one using Welch's Natural Strawberry Jelly and another using the Concord Grape. After you're done making your sandwiches, grill them like you would grilled cheese. Add butter to a frying pan or butter the outside of the bread on your sandwiches. Either way works, but we usually just melt the butter in the pan because it's less messy! After your grilled PB&J's are done, allow them to cool enough to be easily handled. This is super important because hot, melty peanut butter HURTS! Once they're cooled. cut each sanwich into quarters, making smaller squares. Then stack the pieces up like a pyramid. 4 at the base, then 3, 2, and 1. (Or however you'd like, really. Creativity is fun!) Garnish with jumbo marshmallows or even banana slices! Sophisticated? No, not really. But it's fun to make, and the kids love it! I've made the peanut butter grilled marshmallow cream sandwiches for years. I like Kyles' idea of adding jelly.He might find it easier to use marshmallow cream. His sandwich looks good.
