Well, it's official...I'm getting old! Very, very old, if you ask my 11 year old! In celebration of my 30th birthday this June, I am hoping to bring you a month-long birthday event, with lots of fun posts and of course, giveaways! It is no secret that after having 2 babies in a 12 month period, my body is NOT the same. Yes, I have lost ALL of the baby weight. With Xander, I only gained about 10-15 lbs, so the weight was gone as soon as I was home from the hospital and the extra fluids associated with having a c-section subsided. It's kind of frustrating, because while I weigh a little less than I did before I got pregnant with him, my scale has been STUCK at 147lbs for a month now. It seems I cannot lose any more weight, no matter what I try. I would ideally like to weigh around 125-130, since I don't have a tiny frame and will never be a size 0. So I am trying to find ways to drop another 20lbs, hopefully by my birthday at the end of June. (My struggles there are a whole other post, though,lol) Anyway, after serving as a baby factory for the past 2 years or so, I have noticed definite changes in my body. The main thing that irks me is my lower belly. Yep, I have the belly pooch. I guess after a total of 3 cesareans, I shouldn't be too surprised! But having a belly has not been a big help for my already low self-esteem. Even though there are plenty of cute, form-fitting clothes I would love to wear, especially with summer approaching, I usually won't even try them on because I am very self-conscious about my body. I don't like feeling that way, and I want to be able to look like an attractive woman, even though I am the mama of 2 babies under the age of 2. A good weird, but weird, nonetheless. One of the more odd things about him, other than breaking into spontaneous dance in the aisles at WalMart, is that he HATES anything with red sauce. He would even opt to get pizza with no sauce at all rather than tomato sauce if he could convince anyone else in the house to let him! Tonight I FINALLY succeeded in making a lasagna that he RAVED about: Cajun Chicken Lasagna! I found the recipe while looking for something different to make with chicken, and he had suggested something Cajun. I had never heard of this dish before, but I was willing to give it a shot. It was definitely labor intensive, but the time and effort it took to make it was definitely well-spent. I opted to make my own alfredo sauce rather than use the 2 jars of prepared alfredo, as called for in the recipe.Alfredo sauce is very, very simple to make, and I much prefer it over store-bought sauce. However, I am leaving the recipe as is, for convenience sake. If you decide to try this dish, just know that you CAN substitute the jarred sauce with home made. If you're not sure how to make alfredo sauce, please feel free to leave a comment and ask, and I will post my recipe, which just happens to be fabulous! Anyway, we LOVED this dish. It was creamy and decadent, with just the right amount of heat from the sausage and Cajun seasonings. This was definitely a very unique spin on a much loved dish, and I will be making it again! If you decide to try it, please let me know what you think! I'd love your feedback! It seems that everywhere I look, I see big pink bunnies, baskets overflowing with colorful eggs, and Peeps galore! That can only mean one thing: Easter is officially on its way! I know a lot of people love Easter primarily for the Easter egg hunts and the chocolate treats, like Cadbury's Cream Eggs or big, chocolate bunnies, and seeing little tikes all dressed up in their finest dresses and suits. Well, I, like all of you, enjoy these things, too!
But for the past 2 years especially, Easter has had a very special meaning to my family. You see, when my husband and I got together, we tried desperately to have a baby. We tried for a few years, and in that time, had 3 miscarriages. I was diagnosed with PCOS, a hormonal disorder than can adversely affect a woman's fertility. I did not want my oldest to be an only child, and it seemed that I was somehow broken. All the while, it seemed that everyone around me was getting pregnant and having babies. After becoming seriously depressed,I finally gave-up, leaving it in God's hands. If we were meant to be blessed with babies, it would be done in His time, not mine. Well, in April of 2009, (right near Easter) we conceived our beautiful, feisty little diva, Sophie. While we were pregnant, my husband made the nerve-wrecking decision to locate his biological parents. He was adopted shortly after birth by a wonderful, kind, and loving family and has had a terrific life, but we needed to get some medical background for our OBGYN, since they were classifying me as being high-risk at the time. His adoptive mom was wonderful, and copied down as much info as she could, even though back in 1977, open-adoptions were not prevalent. She basically "sneaked" names and addresses and anything else she could remember into a file, and placed this file into a safe deposit box, just in case Dan had questions about his identity later on in life. So after doing some extensive searching, we found his Mother. I wrote the letters, since Dan was too nervous to know what to say and enlisted my help, and I sent them off. Soon after, we received the first of many phone calls from his birth-mother. (We just call her Mom now!) We found out Dan has 3 amazing sisters and 2 beautiful nieces, as well. (Soon to be another niece or nephew in the mix, as one of his sisters is expecting!) We absolutely LOVE them all to death, and cannot wait to finally meet them face to face. With me being pregnant and unable to travel for almost 2 years, as well as financial issues on both sides, we have yet to meet his Mom's side of the family. Hopefully soon, though! I want Grandma to meet her grandbabies, and to see a mother hug the now adult child she made the difficult and very painful decision to place for adoption many years ago. Dan's Mom was able to give us more info on his father. Shockingly enough, his Dad has lived less than 2 hours away from us for many, many years! We contacted him, as well, and that entire side of the family has been so kind and accepting of us! Dan even has a teenage brother who towers over him at the age of 13. His Dad's side of the family is a blast, and are some of the kindest, most genuine people you could ever hope to meet. They even embrace my oldest from a previous marriage as one of their own. We just seem to fit right in with them. It's comfortable, and they are a very close family with a killer sense of humor. We really enjoy our time with them. It's funny, too, because Dan looks SO much like his dad! They even have the same attitude and demeanor! It's amazing how much seems to be hereditary,lol. Anyway, back to Easter. We go up to Dan's aunt's house for Easter. She is his biological father's sister, and she hosts the festivities every year. It's a tradition they have invited us to share in. We also do Christmas and Thanksgiving with them as well. Last year, on Easter, his Dad's side of the family got to meet our miracle baby, Sophie, many of them for the first time. She was the first grandchild for Dan's father, and the first GREAT-grandchild for his grandparents. It was wonderful seeing his grandmother dote on my little Princess! This year will be special, too, since we have another new addition to introduce to all the aunts, uncles, grandparents and cousins: My new baby, Xander! To me, Easter is not only a time to celebrate our faiths, and to celebrate chocolate...It is a time to celebrate family. To be with those you love, whether they were there your whole life, or you've been blessed enough to find them years later. We have the rest of our lives to get to know Dan's biological family, and it just so happens, at least for his Dad's side, Easter will be the day that they get to welcome our babies into their hearts for the first time. Okay, so I have a confession to make:I am ADDICTED to BabyLegs. Even though it's COLD here in Virginia, there is evidence all around that spring is here, and warm weather is fast approaching. We all know what warmer weather means... Wedding season is upon us, family getaways to the beach are getting nearer, as well as many other reasons that force us to bare a little more skin than we do in the winter. I am dreading it, personally. I just had my son, Xander, in January, 12 months after my daughter, Sophie, was born. So I have darn close to 2 years worth of recent pregnancy under my belt, as well as 2 C-sections, and it doesn't leave me feeling very body-confident! You mamas know what I mean. Pregnancy changes a woman's body, and it's not always for the better. I for one have the dreaded belly pooch! I actually acquired it after my 11 year old was born, also by C-section, and it seems that my pooch has taken up permanent residence. (BOO!) I have lost almost 50 lbs since my daughter's birth, and luckily I didn't gain anything with my son that wasn't lost immediately after his birth. But I would still like to shed 20 more pounds by my 30th birthday at the end of June. I have never been happy with my body, and have been guilty of resorting to very extreme measures to lose weight in the past. That is something I am not proud of at all, and not the example I want to set for my daughter. Yes, the things I did worked, and they worked quickly, but I was doing damage to myself in the process. What good is being thin if you're not healthy? No one looks good when they're sickly, regardless of the number on the scale. There is a ton of pressure nowadays from the media and society in general for women to look a certain way, and I have made the resolution to myself and to my children not to fall too deeply into old habits all in the sake of losing weight. If I lose weight, I am going to try my absolute hardest to do it right. My children deserve a healthy mama! So as bathing suit season rapidly approaches, and my scale seems to be perpetually STUCK at 147lbs, I have been looking for a good way to shed a few unwanted pounds by summer in a sensible way.
