![]() In our home, we eat a lot of Mexican foods. My husband loves things a little spicy, and I love pairing fresh veggies with cheeses, beans, beef, or poultry. I make a lot of great dishes like enchiladas, chimichangas, tostadas, and even a wonderful taco salad. I also love to whip up a batch of fresh guacamole, some Spanish rice, or some refried beans as sides. It's a downright Mexican fiesta when I cook! I'm sure you've noticed that all of these meals have one thing in common: the tortilla! I happen to love tortillas. They're incredibly versatile, tasty, and good for more than just Mexican foods. I love making deli-style wrap sandwiches for lunch.They're a nice change from a conventional sandwich, and always seems to please my 12 year old. I also use tortillas to make dessert pizzas. I like to spread a thin layer of cream cheese on a tortilla and then top it with fresh fruits and a drizzle of chocolate. Yum! (These are amazing done on the grill!) Recently, I discovered a fantastic new book by Jessica Harlan, a graduate of the Institute for Culinary Education in New York City. In her book "Tortillas To The Rescue Cookbook", Jessica tackles the seemingly ordinary tortilla and comes up with 100 inventive, diverse uses for them! She offers breakfast, lunch, dinner, and even dessert recipes. In all of them, the tortilla is the star of the show! I've been having a blast trying the recipes in this cookbook. A few days ago I made Mexican Lasagna for dinner, and this morning, I prepared Nutella Quesadillas for the kiddos. They were a big hit! I plan on trying some of the soups next. I am not usually a fan of soup, but some of the soups featured in this book sound quite intriguing!
The only thing I would change about this cookbook is the lack of pictures. Nothing makes me want to try a recipe more than seeing gorgeous photos of the finished dish. This cookbook doesn't have any photos, except on the cover. While this was a slight disappointment, the creativity and range of recipes within more than make up for it. Overall, I am quite impressed with the recipes in Tortillas To The Rescue. I love the fact that the author thinks outside the box and pairs ingredients you wouldn't commonly associate with tortillas. I also like the fact that you don't need to be a gourmet chef to prepare these dishes. Most of them are quite simple, and the instructions are very easy to understand. As a matter of fact, I think this is a great cookbook to use when teaching older kids beginning cooking skills! I love breakfast tacos: scrambled eggs, some sausage (or bacon or ham), cheese, salsa, fold, enjoy! So easy, and you can use up lots of leftovers with these!

I love burritos. Just fry up some ground beef and onions with taco/burrito seasoning, and roll in the tortillas. Serve with salsa, sour cream, and/or guacamole.
