You might recall that I recently posted about giving cooking with spreads a shot due to my husband's affection for junk foods. He eats cakes, snack foods, and candy whenever he thinks I am not looking, and I am really starting to worry about the health consequences he may face as he gets older.
While I usually buy mostly organic foods, including butter, the saturated fats and cholesterol content had me worrying. Sure, everything is fine in moderation, but try telling my hubby to go easy when it comes to butter and you're bound to get slapped!
So now, I am preparing a good portion of our meals with I Can't Believe It's Not Butter, since it contains no cholesterol, and has 70% less saturated fat and 30% fewer calories than butter. It also has the buttery flavor that my husband tends to drown his food with. So changing things up a bit is worth a shot, right?
Since I have been trying to cook some of our recipes with I Can't Believe It's Not Butter rather than my usual organic butter, I decided to try and come up with a meatless meal that my husband would actually like. (Not an easy feat, since Dan not only loves real butter, he also hates veggies, for the most part.)
I decided to make a simple dish, using fresh cheese tortellini, some fresh mushrooms, freshly minced garlic,and some sweet red peppers for added color and texture. In place of my usual butter, I used I Can't Believe It's Not Butter Spread.
I melted the I Can't Believe It's Not Butter in a pan, and added my garlic, peppers, and mushrooms. Once the mushrooms and peppers were starting to get crisp-tender, I added my seasonings, the remaining spread, and some white wine. I cooked this mixture on medium-high heat for just a few minutes to let the wine sauce reduce. Wow, did it smell great!
Once the sauce was cooked down a bit, it was time to toss it with my tortellini. Then I added some freshly chopped Italian Parsley and some delicious Parmesan cheese I found that has crushed red pepper in it. This gave it a little heat, but nothing too overwhelming.
I served this with some nice, crusty, cheesy garlic breadsticks that I found in the bakery department at Walmart. It was SO good, and surprisingly filling, too! The flavors were vibrant and fresh. The mushrooms had a wonderful earthiness that paired beautifully with the sweetness of the red peppers and the tang of the cheese. Even my veggie-hating husband didn't complain about the lack of meat! And he couldn't tell that I didn't use "real" butter.
Overall, I was delighted with the end results. I was a bit skeptical, since I have always been a butter purist. I have never really used spreads very much, and I found that our I Can't Believe It's Not Butter spread melted very easily, and had a nice, buttery flavor.

Will I totally walk away from my Organic Sweet Cream Butter? No...Of course not. However, I will be using I Can't Believe It's Not Butter on a very regular basis, since it's so much lower in saturated fats and calories, and contains no cholesterol. I am quite impressed by the flavor and ease of use, and maybe, just maybe, my husband won't have a heart attack anytime soon due to this small dietary change!
