You see, I almost never allow sweets or overly processed foods into our home. If I can help it, at least. My husband has a way of sneaking in his own private stash! I much prefer whole, organic foods whenever possible. If they're locally sourced or homegrown, even better. I tried my hand at a garden this year, but sadly, it was a flop. I am not used to the different climate here in Ohio, and my seedlings froze. Thankfully, we have some amazing local farmers markets that I love to frequent. I just love making wholesome, nutritious, and delicious meals using the best organic ingredients. Most of the time, my kids don't even realize how good these things are for them, since they taste so fresh and wonderful. I have recently found a ton of inventive, kid-friendly plant-based recipes in The China Study Cookbook by Leanne Campbell, PHD. Here's some more info about this great book, just in case you're not familiar with it already: About the China Study Cookbook : The China Study, with 850,000 copies sold, has been hailed as one of the most important health and nutrition books ever published. It revealed that the traditional Western diet has led to our modern health crisis and the widespread growth of obesity, diabetes, heart disease, and cancer. Based on the most comprehensive nutrition study ever conducted, the book reveals that a plant-based diet leads to optimal health with the power to halt or reverse many diseases. The China Study Cookbook takes these scientific findings and puts them to action. Written by LeAnne Campbell, daughter of The China Study author T. Colin Campbell, PhD, and mother of two hungry teenagers, The China Study Cookbook features delicious, easily prepared plant-based recipes with no added fat and minimal sugar and salt that promote optimal health. From her Breakfast Home-Fry Hash and Fabulous Sweet Potato Enchiladas to No-Bake Peanut Butter Bars and Cheese(less) Cake, all of LeAnne’s recipes follow three important principles:
Our Thoughts About The China Study Cookbook : We really enjoy the recipes in The China Study Cookbook. My kids especially love the Pumpkin Pancakes and the No-Bake Peanut Butter Bars. These kid-pleasing recipes are super-easy to make and require very little heat-processing or seasoning. The results? Food that tastes exactly the way nature intended! I love using fresh fruits and veggies, and I have found that fresh herbs do a lot more for flavor than salt based seasonings. Even my husband and my teen have enjoyed these meals, which I found a bit surprising. Normally, my "men" are very resistant to my clean way of eating. They like the junk and processed foods. So when I made them Breakfast Home Fry Hash and they cleaned their plates, I was more than delighted! If you're looking for delicious ways to eat more nutritious whole foods, I would definitely recommend checking out The China Study Cookbook. I think you'll be pleasantly surprised by how quickly these recipes get devoured, even by the most picky of eaters! Enter to WIN Your Very Own Copy : I am thrilled to announce that one lucky reader will get their very own copy of The China Study Cookbook!

My biggest healthy eating challenge is snacking in the evening on unhealthy food. I seem to want salty or sweet snacks and look for something processed.

I grab whatever is available and the quickest, which is not always the healthiest. Chips and crackers are my downfall.

Processed foods. They are bad. I know this, but they make life so much easier! With modern, busy lives, who has time to take care of everything for their families plus grind your flour and make your cheese?

My husband and I started the Engine 2 (plant based) diet a month ago and my biggest challenge to eating healthy is my absolute love of ice cream.

I've never heard of this cook book before and I'm so happy to have found it. This would make a great gift for 2 of my daughters who really appreciate these recipes. My biggest problem is my love ad addiction to Pepsi every single day for over 40 years. Definitely a bad habit I'm trying to break.
