![]() With St. Patrick's Day right around the corner, I thought it would be fun to share a very tasty yet deceptive candy recipe with you all. I have been making this for years, and it always takes people by surprise. Why is this candy so unique? Well, as you can see it looks just like a bunch of potatoes, which we all know is an Irish staple. In reality, these are made with a few simple ingredients that you probably already have in your home. The thing I like the most about this candy is that it's sweet, but not sickeningly sweet. I love the combination of cream cheese, cinnamon, coconut, and confectioner's sugar. It's really quite tasty, and sure to please everyone at your St. Paddy's Day gatherings. Ingredients:
Directions:
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
