![]() Monterey Chicken AKA: Bacony goodness! My husband's MOST requested dish! I mean absolutely no offense to my vegetarian and vegan friends, but I have to say, I am a firm believer that bacon makes everything better! That savory, smoky taste...The nice crispness....Whether wrapped around a water chestnut in a nice Rumaki or topping my famous Monterey Chicken, (or as the hubby calls it, "Bacon Chicken") bacon can add a whole new dimension of flavor to commonly eaten foods. I like to shake things up a bit by using bacon on steaks, in my baked potato soup, even in grilled cheese sandwiches! No, we don't eat bacon every day. I doubt our arteries would ever forgive us if we did. But I do enjoy adding bacon to several dishes. I feel it enhances the overall flavor and feel of a dish. I try and find new and interesting ways to utilize bacon while experimenting in the kitchen. I like thinking outside the box. I add bacon to my chilis, to my stews, and I have even used bacon in desserts! Trust me, bacon and chocolate DO go together! I made my twice baked potatoes like I usually do, with a blend of different cheeses. I simply added a dab of Skillet Bacon Jam to my cheesy potato mixture before I filled my potato skins to bake them the second time. Again, the Skillet Bacon Jam was a real treat, and added a whole new and unexpected dimension to my potatoes. There is the distinct flavor of bacon, of course, but add to it the rendered down onions, balsamic vinegar, and their secret blend of spices, and you have a flavor explosion of epic proportions.
