Hey, till there's 3 feet of snow on the ground, our grill remains in commission! One reason we love grilling so much is because it produces perfectly cooked, insanely flavorful foods that are simple to prepare and bring our family together. Plus, it allows my husband to do some of the work, since he's a "manly man" who likes being behind a hot grill. Celebrity Chef Fabio Viviani (Top Chef All Star and Fan Favorite) has created some great summer recipes for Bertolli Olive Oil that you can try out for yourself! Get a napkin ready....And prepare to drool! Don't these look amazing? I think I will definitely be adding the Flank Steak recipe to my rotation. I love cooking with Bertolli Olive Oil as well. I use it often, since it not only tastes amazing, but is better for you than traditional vegetable oils. The awesome folks at Bertolli sent me some of their Classico Olive Oil to try myself, and I have had a wonderful time experimenting with different recipes. I love the Classico Olive Oil because it has a much higher smoke point than extra virgin olive oil, but definitely doesn't skimp on flavor. I made this amazingly simple, incredibly flavorful grilled chicken using Bertolli Classico Olive Oil. My entire family absolutely loved the bright, vibrant flavors of all of the lemon, garlic, and herbs. Check it out! The Tastiest Grilled Chicken Ever ! Ingredients: 4 boneless skinless chicken breasts 1 whole lemon 1/2 cup Bertolli Olive Oil 3 cloves of freshly minced garlic 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1 teaspoon fresh rosemary, finely chopped 1 teaspoon fresh thyme, finely chopped 1 teaspoon fresh basil, finely chopped This chicken dish is very simple. It requires an assortment of fresh herbs, some extra virgin olive oil, sea salt, black pepper, fresh garlic, lemon, and of course, some high-quality chicken breasts, preferably organic. The fresh herbs need to be very finely chopped. I love chopping herbs because the aroma is amazing....almost intoxicating, to be honest. Once the herbs are chopped, you add them into a bowl or Ziploc bag with the lemon juice, olive oil, salt and pepper to make a vibrant, healthy marinade. The chicken will need to be pounded out to about 1/4 inch thick, and then it's added to the marinade. You can let it sit overnight, or for as little as 30 minutes if you're in a hurry to get dinner on the table. I personally recommend longer marination because it allows all of these beautiful, bright flavors to marry and infuse themselves into the chicken breast. Once the chicken is done marinating, it's time to fire up the grill. Or you can use a grill pan on the stove, of course. We love cooking out in our household, and I just bought my husband a brand new grill for our anniversary, so naturally we took the cooking outdoors for this meal. Since the chicken is pounded very thin, it doesn't take long to cook at all. Only a couple of minutes per side. This quick cook time is awesome, especially because once you smell this flavorful dish cooking, you're not going to want to wait very long. It smells mouth-wateringly amazing! Once your chicken is perfectly grilled, serve it alongside some fresh veggies or a salad. We made a roasted cauliflower salad with chick-peas and a tangy mustard-laced viniagrette. Doesn't this meal look wonderful? And it's low carb, protein packed, and absolutely bursting with fresh flavors. This is just one of about a zillion recipes that can be made using Bertolli Olive Oil. I use it all the time, and not just in grilled recipes. As a matter of fact, I make a very tasty olive oil cake that is savory with a hint of sweetness. I use Bertolli Olive Oil for just about everything I use. Its healthier for you than vegetable oils. Not to mention, Bertolli's Olive Oil gives everything good flavor. The Grilled Chicken Recipe looks delicious.
