Of course I will never completely give up on my organic butter, I have been substituting it with spreads a lot lately. The reason for switching things up? The meals I have been preparing with spreads have all been big hits here. It melts easily, tastes very buttery, and has even worked well for baking. This surprised me very much, since I have always used butter while baking! My husband has enjoyed the change, and so have my kids. As a matter of fact, my teen loves to help cook, and he asked me if he could come up with his own recipe and share it here. Of course I was happy to oblige. He even wanted to make a video showing just how easy it is to use spreads in kid-friendly meals. Kyle came up with a great way to jazz up a grilled cheese sandwich. He made a Pizza Grilled Cheese sandwich, and it is very, very tasty. My toddlers gobbled them up happily, and I enjoyed it, too. It's very satisfying, especially if you have a pizza craving and don't feel like calling for delivery. Here he is explaining his dish and showing how it's made: Step by Step Instructions : This dish is so easy to prepare. It's perfect for beginning chefs like my 13 year old. It's also a great speedy meal option on those busy days. All you need is some bread. Any kind will work, but we used some white bread fresh from the Schwebel's bakery down the street. First, spread each slice of bread with I Can't Believe It's Not Butter. Then, place one slice of bread, buttered side down, into a frying pan. Add a slice of cheese, and then top with a generous spoonful of pizza sauce, pepperoni, and top with additional cheese. (We used American and Cheddar, but any kind that melts well will work!) Then add the top slice of bread, butter side up. Cook a few minutes on each side until the bread is browned and crispy and the cheese is gooey and melty. This is so easy, and kids are sure to go nuts for their pizza inspired grilled cheese! After all, 2 things kids seem to love are pizza and grilled cheese. Combining them is a sure winner in my house. Preparing this meal with I Can't Believe It's Not Butter was also very simple. I know I have had a hard time making grilled cheese with ordinary butter in the past, particularly if it hadn't softened enough. At times, the act of spreading the butter would tear my bread. Using spreads, this never happens. The buttery flavor is definitely there, and is always evenly distributed. Yum! So if you haven't tried cooking with spreads, I would definitely recommend giving it a shot. While I still use organic butter for some things, I have found that using spreads in most of our meals has been a pleasure. They are very versatile, and lower in saturated fats and calories than butter. I also don't need to obsess over cholesterol content, which makes me feel a lot better about my husband's diet. I made this a few years ago. I'm not a good cook and when I'm hungry want food NOW! I have several sandwiches I've come up with out of lazy desperation.
