My family loves Mexican food. We eat it weekly,and even sometimes more than once a week! When plain old tacos get boring, we enjoy meals like enchiladas, Mexican pizzas, quesadillas, taquitos, and fajitas. The other night, I made a delicious pollo fundido, too. Mexican cuisine is incredibly versatile, and can be switched up in tons of different ways, depending on your mood and what ingredients are on hand.

I'm a picky eater, so we don't have anything fancy, just normal tacos. But we eat tacos often! They're my favorite foods! once my friend and I ate 12 each! haha

I like to put beans, yukon gold mashers, and sometimes bacon upon my tacos. Most people flinch, but once they try them, they don't complain anymore. LOL.

I love to use chicken instead of beef. I will marinate chicken in italian dressing (or whatever dressing, flavor is optional) for a day in the fridge and then bake it in the oven. When its done, I shred the chicken and make chicken burritos. Add some cheese and other toppings (my fiance likes cubed cut potatoes and I add plain nonfat greek yogurt) and its an easy, delicious meal.

I love double decker tacos...Make your normal taco in a hard shell. Surround with a soft shell layered with refried beans, cheese etc

We make a Mexican casserole with the left over meat, beans, cheese and layer it with left over shells, top with cheese and bake till warm then add veggies, sour cream and all the other trimming you like, Is yummy

When I make tacos,I sometimes use jamaican jerk chicken instead of seasoned ground beef.I put on extra cheese and sometimes green onions.I also use beans sometimes instead of meat.I alternate between hardshell and softshell.

In a pinch, a quick way to make spicy rice is to use salsa in place of some of the water. Comes out great and is easier than using fresh veggies.

We usually have a lot of extras with our tacos. We can make taco salads or load up the tacos with pico de gallo, sour cream, different chopped veggies and other toppings. We also use both crunchy and soft taco wrappers.

Sometimes I make bean tacos instead of using meat.I'll put refried beans at the bottom and layer it like regular tacos.

My daughter just made nachos last week with refried beans mixed with cream cheese and mozzarella cheese sprinkled on top baked in the oven it was delicious

I MAKE MY OWN TOPPING BY MIXING CREAM CHEESE & SOUR CREAM WITH HERBS & GREEN ONIONS! I make it into a log ahead of time & it can be cut & use with everything!
