While I don't suffer from Celiac's Disease or gluten intolerance, I have been eating more and more gluten-free foods lately. You see, I want to lose about 15lbs before my birthday in June, so I have started making certain lifestyle changes in hopes of successfully reaching this goal.
Some of the changes I am making are drinking more water, eating more vegetables, eating organic whenever possible, and limiting my gluten and carb intake.
I know what you're thinking. Gluten-Free? Doesn't that taste like cardboard? That's what I thought, too, until I tried the gluten free foods from Udi's! Don't believe me? Try this vegetable pizza recipe featuring Udi's pizza crust! The sauce is to die for, the veggies and cheeses delectable, and it's a nice change from traditional pizzas! You would never even suspect what's missing!
1 Udi's Gluten Free Pizza Crust
1/4 cup cauliflower
1/4 cup broccoli
1⁄8 cup shredded carrot
1⁄8 cup chopped red bell pepper
1/4 cup fresh baby spinach
1/4 cup mushrooms, sliced
1/4 teaspoon minced garlic
2 cups mozzarella cheese
1/4 cup feta cheese,crumbled
4 ounces cream cheese
1/4 cup caesar salad dressing
2 tablespoons sour cream
1/4 cup fresh baby spinach (optional)
1. In a bowl, mix the sour cream, caesar salad dressing, and cream cheese together until mixture is smooth.
2. Spread mixture evenly on top of pizza crust.
3. Spread vegetables evenly across pizza.
4. Cover pizza with mozzarella and feta cheeses
5. Sprinkle with minced garlic
6.Bake at 500 degrees for five minutes or follow your pizza crust directions.
7. Top with baby spinach and enjoy!
