I am a huge fan of Avocados from Mexico. It's funny, because until I was pregnant with Xander, I wouldn't even try them. I am a notoriously picky eater, and was never brave enough to try avocados. Then one day we went to my Father-In-Law's house for a summer get-together. One of their friends, who looks just like Alton Brown, had brought some homemade guacamole. It was bright, colorful, and was calling my name. At the time, I never argued when hunger called. I was pregnant and had some odd cravings sometimes! So I grabbed a tortilla chip and dove right into this heavenly concoction. Oh. My. Goodness. I must admit, it was love at first taste! I couldn't believe I hadn't tried this before! Jim's guacamole was amazing, with garlic, tons of fresh lime and cilantro, and even a little bit of heat from jalapeno peppers.
I had just discovered my new favorite food, and it's one I have enjoyed many, many times since then. I used to send my poor hubby out at all hours of the night to get me guacamole while I was pregnant. After that first taste, I couldn't get enough. He'd have to go to restaurants and get some, or if it was too late, he'd head out to Walmart and get me my fix. After giving birth, the craving has remained strong. I make my own guacamole quite often now, and I have even used avocados on sandwiches, in salads, and even in pasta! Yes, avocados are very versatile!
