In my home, we eat a LOT of chicken. A lot. This is not only because I usually score awesome deals on boneless skinless chicken breasts, but also because chicken is a very versatile ingredient that can be used in about 4,395,953 different ways. Okay, that may be a bit of an exaggeration, but you can use chicken in a myriad of ways.

One chicken dish my kids never seem to tire of is my Buttery Cracker "Fried" Chicken. This dish is easy as pie, too! It takes only a few ingredients, and produces some of the juiciest, most tender chicken you'll ever try. Say goodbye to boring, dry chicken breasts. Sink your teeth into tender, buttery goodness.

The secret to the perfect, super-moist chicken in this dish? Rich & Creamy Melt Organic Buttery Spread!

Rich & Creamy MELT is a luscious butter improvement – an Organic ‘Butter 2.0®‘ – that is a delicious alternative to butter. Rich & Creamy MELT Organic cooks, bakes and melts just like butter, but with half the saturated fat and fewer calories.

Melt Organic makes all the difference in my famous Buttery Cracker "Fried" Chicken, too! Here's how to make this easy, family pleasing meal. All you'll need are a few ingredients:
-1 lb Boneless Skinless Chicken Breasts
-2 sleeves buttery crackers
-1 cup shredded cheddar cheese
-1/2 cup Rich & Creamy Melt Organic

Preheat your oven to 350F.

Crush your crackers up into crumbs and add them to a gallon sized freezer bag. Then add your shredded cheese. Mix this up very well.

Melt your Rich & Creamy Melt Organic and set aside.

Dip each chicken breast into your Melt Organic, and then roll around in the cracker/cheddar mixture, making sure it's well-coated.

This is a VERY forgiving dish. If you feel your chicken isn't coated enough, just take some extra cracker/cheese mixture and plop it on top of each breast. It doesn't have to look pretty. You want to make sure your chicken is covered generously. This is where all the flavor is, folks!

Once your chicken is coated well, pour the melted Melt Organic spread over your chicken. Make sure to drizzle this all over. While baking, this topping will become crispy and absolutely delicious.

Bake your chicken, uncovered, for 1 hour. Your home will smell amazing during the cooking process, but this chicken is definitely worth the wait.

Once the chicken is done, it should be tender, moist, and covered in a beautiful, crispy, buttery crust. I like to take any extra cracker bits from the baking dish and spoon them on top. The more topping, the better!

This chicken is sure to please even the pickiest of eaters. It's nice and simple, and comes together quickly for a painless and delicious weekday meal. You can serve this chicken with mashed potatoes and a nice salad, or with anything else your family happens to love.

If you'd like to change things up a bit, feel free to add different seasonings to your cracker and cheese mixture, too! I've used Cajun Seasoning, and even Italian Herbs and Parmesan. This is a dish you can really get creative with!

If you're looking for an easy, almost fool-proof chicken dish with loads of flavor, definitely try my Buttery Cracker "Fried" Chicken. Try not to lick your plates clean!

The Recipe :

Ingredients:
  • 1 lb. Boneless Skinless Chicken Breasts
  • 2 Sleeves Buttery Crackers
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Cup Rich & Creamy Melt Organic
Directions:
  • Preheat oven to 350.
  • Crush crackers into crumbs inside a gallon sized freezer bag. Add cheddar cheese. Mix well.
  • Melt your Rich & Creamy Melt Organic spread.
  • Dip chicken into the Melt, and then coat well with the cracker/cheese mixture.
  • Place into baking dish, and top chicken with more of the cracker/cheese mix.
  • Drizzle the Rich & Creamy Melt Organic ALL OVER the chicken. Be liberal with this, as it will help give crispy, delicious results!
  • Bake for 1 hour, uncovered.
  • Serve with potatoes, salad, or whatever else your family loves!

Yummy! I make this all of the time, only I call it ritz chicken and I have never used Melt Organic before! I will have to try it. :) Thank you for sharing!!

Since I serve chicken frequently, I like this recipe because it's different than recipes I have now. Chicken is my favorite meat.
