Let's face it: As moms, we stay busy coordinating schedules, helping with homework and kissing boo-boos all better, and maintaining a home. Not to mention working, too! So it's no surprise that there isn't always time to make elaborate, super labor intensive meals. One thing I love making when the natives are hungry and restless and I am short on time is my super-simple Chicken and Broccoli Alfredo. This dish is restaurant quality in taste, and uses simple ingredients that you probably already have in your pantry and fridge! Oh, and it is ready in 30 minutes or less, too! I made this the other night, but I switched things up a bit. Rather than using olive oil and allowing a longer cooking time since it has a low smoke point, I chose Pompeian Grapeseed Oil. Grapeseed Oil is virtually flavorless, so it can be used in any dish. It also has a super-high smoke point, which allows you to cook at much higher temperatures than olive oil. I simply added my chicken, which is coated in Italian Dressing mix, along with my garlic, to my wok, which was liberally sprayed with Pompeian Grapeseed Oil. This definitely sped up the time it took to cook my chicken! Once the chicken was cooked through, I added a delicious, creamy Alfredo sauce (recipe to follow) and some crisp-tender broccoli florets. You can use fresh or frozen broccoli for this recipe, but I tend to prefer fresh. After simmering for a few minutes to let the flavors marry, just serve this mixture over the pasta of your choice. I usually use Fettuccine, but I realized I was out. Regular old Spaghetti noodles worked out just fine. There ya go! A simple yet truly decadent dinner that's sure to please even the pickiest of eaters, even when you're short on time. My kids absolutely love this dish paired with a nice, crisp field greens salad.
