Recently, we have enjoyed many delicious, organic meals using products from Door to Door Organics. I would love to share a quick, easy summer recipe with you. This Caprese Chicken Pasta Salad is made from fresh, organic produce, organic chicken, and it is spectacular. Easy, too! And come on.....Admit it. We all love dishes that are quick and simple, especially with busy summer schedules! This is the perfect light summer supper, or even a great dish to bring to BBQ's, family reunions, and other seasonal get-togethers. All you need are a few simple ingredients, including staples from Door to Door Organics, of course! For this recipe, you will need Organic Boneless Skinless Chicken Breast, Farfalle (bow tie) pasta, fresh Organic Basil, Organic lemon, Organic Tomatoes, an Organic Green Bell Pepper, Eden Organic Cannellini Beans, your favorite Vinaigrette, and a few spices. Cook your pasta according to package instructions. Then drain it in COLD water to stop the cooking process and set it into the fridge for safe-keeping. While the pasta is cooking, season chicken breasts liberally with sea salt and freshly ground black pepper. Squeeze the juice of 1 lemon over them, making sure each side is well coated. Let sit for 15-20 minutes to allow the flavors to mix and do their magic. While the chicken is marinating in the lemon juice and spices, chop up your peppers, tomatoes, and basil. I just do a rough chop, but if you want to make it prettier, you could Julienne or dice them much more precisely. Now it's time to grill the chicken. You can do this outdoors, or use an indoor grill like the George Foreman. (That's what I did this time, since it was a dreary, rainy day here in NE Ohio.) Be sure to grill the chicken until the juices run clear and the internal temperature is 165°F. This took about 10-12 minutes on my Foreman. Let the chicken cool enough to be comfortably handled, and then slice it into small chunks or strips. Squirt more lemon juice onto the chicken, and feel free to add more salt and pepper if you'd like. Next, add everything to the chilled pasta. Yes, everything. The chicken, peppers and tomatoes, basil, Cannellini Beans, cheese, and vinaigrette all get tossed into the bow tie pasta. I add crushed red pepper for a little heat, and a can of black olives because I absolutely LOVE them. These, of course are optional. You can serve this immediately, or refrigerate it several hours or even overnight. This is one of those dishes that seems to taste better the longer it sits. You know how homemade spaghetti sauce or chili is always so much better the next day? Yeah. It's like that. Feel free to try it yourself!
