As the mother of 2 active toddlers, I am always looking for fun ways to make meal time more fun, without skimping on nutrition. There are so many choices out there when it comes to kids' foods, and choosing the best ones can be a bit overwhelming. I will say, I do buy a lot of organic foods whenever possible, but we also purchase some "normal" foods as well, paying close attention to the nutritional content. I want to make sure that my kids are getting proper nutrition for their developmental stages, so I always look for foods that are full of vitamins, whole grains, and aren't loaded with excess sugars. Recently, I learned about something new from Post, geared specifically towards toddlers like mine. Post Sesame Street Cereal comes in two flavors, A is for Apple and B is for Banana. This new cereal is specially formulated to meet a growing toddler’s needs, providing them with 2/3 of their daily whole grains serving with only 1 gram of sugar. My husband is weird. No, really, he is! You see, he hates anything that has tomato based sauce. So spaghetti and meatballs are a rarity in my home, as are chicken cacciatore, most chili, and even some stews. But there is one tomato-based dish I cannot help but prepare on occasion, and I force my husband to simply deal with it: Lasagna! I love, love, LOVE lasagna, and so do my kids! So I often try and find a reason to make it. My recipe is absolutely amazing, and the kids lick their plates clean. It's very meaty, cheesy, and even has a bit of a bite to it because I add spicy Italian sausage and crushed red pepper flakes to the sauce. I also use fresh herbs and cheeses whenever possible, and usually make my own homemade Mozzarella cheese and ricotta for this recipe. (Yes, you can actually make your own cheese at home, and while it's an exact science, it's pretty easy!) They dance and sing to the music, and they stare mesmerized at all of the bright colors and fun, lovable characters. While I don't let them watch television often, Yo Gabba Gabba is one of their favorite programs, and they're always thrilled to get to spend time in "Gabba-Land". Another thing my kids are fairly obsessed with is my iPhone. They are always trying to play with it, and have even hidden it in some pretty creative places, such as in the dog food bag. You're all prettied-up, waiting for your husband or significant other to get home from a long day at work. You've gotten all of the baby food out of your hair, and maybe even styled it in a way other than a messy ponytail or bun. Heck, perhaps you even found time to shave, exfoliate, and get all lotioned-up so your skin is soft and sweet smelling. After all, we do have a teen and 2 toddlers, and my husband works long hours. Romance? What's that? Oh wait...Yeah. I remember now. It's what had in abundance before we had more kids running around. Now don't get me wrong. My husband and I love each other very much, and we're incredibly happy together. But more often than not, it's hard to get a "rise" out of him, if you know what I mean. (Wink, wink!) I cook just about everything from scratch. Notice I said just about...There are certain things we just like better that aren't scratch-cooking, such as instant mashed potatoes. Sure, I can make "real" potatoes, but if everyone in my house prefers boxed, then why not? Aside from our potatoes, I generally make everything myself, from start to delicious finish. But sometimes, whether it be due to a hectic schedule or lack of motivation, I want something easy and less labor intensive. That's when I pull out my trusty slow cooker! I use it about once a week, and it really is convenient. One of my favorite slow-cooked meals is chicken and dumplings. And they're SO easy! Sure, they're not completely from scratch, but no one will ever know unless you tell them. This meal is savory, just a teensy bit sweet from my own personal addition of honey, and it sticks to the ribs. Perfect for a cold winter night!
